Tunisian Lentil Wrap
A flavorful and nutritious wrap filled with Tunisian-spiced lentils, topped with fresh vegetables. Perfect for a quick and easy lunch or dinner.
Ingredients
- β1 cup Red Lentils
- β2 tsp Tunisian Spice Blend
- β2 tbsp Olive Oil
- β1 medium Onion
- β2 medium Carrots
- β1 medium Cucumber
- β1 medium Tomato
- β1 large Whole Wheat Wrap
- β1/4 cup Fresh Parsley
- βto taste Salt
- βto taste Black Pepper
Instructions

Heat the olive oil in a large pan over medium heat.

Add the onion and cook until softened, about 3-4 minutes.

Add the carrots and cook for another 5 minutes, or until they start to soften.

Add the lentils, Tunisian spice blend, salt, and pepper. Cook for 1-2 minutes, stirring constantly.

Add 2 cups of water to the pan and bring to a boil.

Reduce the heat to low and simmer, covered, for 20-25 minutes, or until the lentils are tender.

While the lentils are cooking, slice the cucumber, tomato, and parsley.

Warm the wrap in the microwave or in a dry pan for a few seconds.

Assemble the wrap by spooning the lentil mixture onto the center of the wrap, then topping with the sliced vegetables.
