Smoky Fish Enchilada Stir Fry
A fusion of Chinese and Mexican flavors, with smoky fish and crunchy vegetables. This dish is a twist on traditional Chinese stir-fry.
Ingredients
- β1 lb Fish (tilapia or cod)cut into small pieces
- β2 tbsp Wholesome Vegetable Oil
- β2 Smoky Chipotle Peppersdiced
- β1 tsp Yucatecan Cumin
- β2 tbsp Soy Sauce
- β1/4 cup Enchilada Sauce
- β1 bunch Scallionschopped
- β1 Bell Pepperssliced
- β1 tsp Sesame Seeds
Instructions

Heat 1 tbsp of oil in a wok over medium-high heat.

Add the fish and cook until browned, about 3-4 minutes.

Remove the fish from the wok and set aside.

Add the remaining 1 tbsp of oil, then the chipotle peppers and cook for 1 minute.

Add the cumin and cook for 1 minute.

Add the soy sauce, enchilada sauce, and bell peppers. Stir-fry for 2-3 minutes.

Return the fish to the wok and stir-fry for another 2-3 minutes.

Season with sesame seeds and scallions. Serve immediately.
