Egyptian Lamb Tagine
A hearty and flavorful North African stew made with lamb, spices, and dried fruits.

Ingredients
- β1 pound Lamb shoulderCut into 2-inch pieces
- β1 teaspoon Whole cumin seedsGround if not available
- β1 teaspoon Ground coriander
- β1/2 teaspoon Turmeric powder
- β1/4 teaspoon Cayenne pepperOptional
- β1/2 teaspoon Salt
- β1/4 teaspoon Black pepper
- β2 tablespoons Olive oil
- β1 medium OnionChopped
- β3 cloves GarlicMinced
- β1 cup Dried apricots
- β1 cup Prunes

Instructions

Heat oil in the one-pot over medium heat.

Add cumin seeds and cook until fragrant.

Add lamb and cook until browned, about 5 minutes.

Add onion and garlic and cook until softened.

Add turmeric, coriander, cayenne pepper (if using), salt, and black pepper. Stir well.

Add dried apricots and prunes. Stir well.

Add 2 cups of water. Bring to a boil.

Reduce heat to low and simmer, covered, for 1 hour.
