Wholesome Indian Chicken Tagine
A hearty and flavorful Indian-inspired chicken tagine made with wholesome ingredients, perfect for a weeknight dinner.
Ingredients
- β1 1/2 pounds Boneless, skinless chicken breast
- β2 tablespoons Coconut oil
- β1 medium, diced Onion
- β3 cloves, minced Garlic
- β1-inch piece, grated Ginger
- β1 medium, diced Red bell pepper
- β1 can (14.5 oz) Diced tomatoes
- β2 cups Chicken broth
- β1 teaspoon Cumin powder
- β1 teaspoon Coriander powder
- β1/4 teaspoon Cayenne pepper
- β1 teaspoon Salt
- βchopped (optional) Fresh cilantro
Instructions

Heat oil in a large Dutch oven over medium-high heat.

Add chicken and cook until browned, about 5-6 minutes.

Remove chicken and set aside.

Add onion, garlic, and ginger to the pot and cook until the onion is translucent.

Add red bell pepper and cook for an additional 2-3 minutes.

Stir in cumin, coriander, cayenne pepper, and salt. Cook for 1 minute.

Add diced tomatoes and chicken broth. Stir to combine.

Return chicken to the pot and bring to a simmer.

Reduce heat to medium-low and cook, covered, until the chicken is cooked through and the sauce has thickened, about 20-25 minutes.
