Irish Buckwheat Casserole
A hearty and comforting casserole made with wholesome buckwheat and a hint of Irish charm. Perfect for a cozy dinner.
Ingredients

- ●2 cups Wholesome vegetable broth
- ●2 tablespoons Irish butter
- ●1 teaspoon Casserole seasoning
- ●to taste Salt and pepper
- ●chopped (optional) Fresh parsley

Preheat oven to 375°F (190°C).

In a large saucepan, sauté the buckwheat groats in the Irish butter until lightly toasted.

Add the wholesome vegetable broth and casserole seasoning. Bring to a boil, then reduce heat and simmer for 20 minutes.

Season with salt and pepper to taste.

Transfer the buckwheat mixture to a 9x13 inch baking dish.

Top with additional Irish butter if desired.
