Greek Feta Casserole
A classic Greek-inspired casserole with a tangy feta cheese flavor. Perfect as a side dish or light lunch.
Ingredients
- β8 oz wholesome whole wheat pastashort, tubular pasta
- β8 oz feta cheesecrumbly, salty cheese
- β1 cup wholesome tomato saucehomemade or store-bought
- β2 tbsp wholesome olive oilfor greasing the casserole dish
- βto taste wholesome saltfor seasoning
- βto taste wholesome black pepperfor seasoning
- β1/4 cup wholesome fresh parsleychopped, for garnish

Preheat oven to 375Β°F (190Β°C).

Cook the pasta according to package instructions until al dente. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the tomato sauce and stir to combine.

Add the cooked pasta to the skillet and stir to combine with the tomato sauce.

In a separate bowl, crumble the feta cheese.

In a greased 9x13-inch casserole dish, arrange half of the pasta mixture in the bottom of the dish.

Top the pasta with the crumbled feta cheese, followed by the remaining pasta mixture.

Season with salt and black pepper to taste.

Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
