Creamy Porcini Risotto

Ingredients
- ●8 oz Porcini mushroomsFresh or dried, rehydrated according to package instructions
- ●1 cup Wholesome Arborio riceRisotto rice
- ●1 cup Canadian parmesan cheeseShaved or grated
- ●1 cup White wineDry white wine
- ●4 cups Vegetable broth, warmedLow-sodium broth
- ●2 tbsp Extra virgin olive oilFor sautéing

Heat the oil in a large skillet over medium heat.

Sauté the mushrooms until tender, about 5 minutes.

Add the Arborio rice and cook for 1-2 minutes, stirring constantly.

Add the white wine and cook until absorbed, stirring constantly.

Add 1 cup of warmed broth and cook, stirring constantly, until absorbed.

Repeat the process, adding broth in 1-cup increments, until the rice is cooked and creamy, about 20-25 minutes.

Remove from heat and stir in the parmesan cheese.
