Stir-Fried Chicken with Fenugreek and Algerian Spices

Ingredients
- β1 pound boneless, skinless chicken breastcut into bite-sized pieces
- β1/4 cup fenugreek leaveschopped
- β1 tablespoon algerian spices (cumin, coriander, paprika)mixed
- β2 tablespoons wholesome vegetable oil
- β2 cloves garlicminced
- β1-inch piece gingergrated
- β1 medium onionsliced
- β1 medium bell peppersliced
- β2 tablespoons soy sauce
- β1 tablespoon rice vinegar

Heat 1 tablespoon of wholesome vegetable oil in a large skillet or wok over medium-high heat.

Add the chicken to the skillet and cook until browned, about 5-7 minutes. Remove from the skillet and set aside.

In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the garlic, ginger, onion, and bell pepper, and cook until the vegetables are tender-crisp, about 3-5 minutes.

Add the fenugreek leaves, Algerian spices, soy sauce, and rice vinegar to the skillet, and stir to combine.
