Lamb and Spinach Mediterranean Casserole
A hearty, flavorful casserole perfect for a weeknight dinner, featuring lamb, spinach, and feta cheese.
Ingredients
- β1 1/2 pounds Lamb shoulder, boned and cut into 1-inch piecesSeasoned with salt, pepper, and oregano
- β2 tablespoons Olive oil
- β1 large Onion, chopped
- β2 cloves Garlic, minced
- β1 (14.5 oz) can Canned diced tomatoes
- β1 cup Fresh spinach, chopped
- β1 (7 oz) block Feta cheese, crumbled
- βto taste Salt
- βto taste Black pepper
- β1 cup Pita bread, cubed

Preheat oven to 375Β°F (190Β°C).

In a large skillet, heat the olive oil over medium-high heat.

Add the lamb and cook until browned, about 5 minutes. Remove from heat and set aside.

In the same skillet, add the onion and garlic and cook until the onion is translucent.

Add the diced tomatoes, salt, and pepper. Stir to combine.

Add the cooked lamb back into the skillet and stir to combine.

In a large bowl, combine the cooked lamb mixture, spinach, feta cheese, and cubed pita bread.

Transfer the mixture to a 9x13 inch baking dish and top with additional feta cheese if desired.
