Warmly Spiced Indian-Style Roast Lamb
A flavorful and aromatic lamb dish inspired by Indian cuisine, made with a warm and spicy blend of spices.

Preheat the oven to 180°C (350°F).

Season the lamb shoulder with salt and black pepper.

Heat the ghee or oil in a large Dutch oven over medium heat. Add the sliced onion and cook, stirring occasionally, until caramelized and golden brown.

Add the minced garlic and grated ginger to the pot and cook, stirring constantly, for 1 minute.

Add the warmly spiced syrup, cumin, coriander, cinnamon, cardamom, salt, and pepper to the pot. Stir to combine.

Add the lamb shoulder to the pot and coat with the spice mixture. Cover the pot and transfer it to the preheated oven.

Roast the lamb for 2-1/2 hours, or until it reaches an internal temperature of 63°C (145°F) for medium-rare.
