Grilled Peruvian-Style Chicken
Marinated chicken grilled to perfection with Peruvian spices. Serve with your favorite sides.
Ingredients
- β1 whole chicken, cut into 8 pieces Pollo
- β1/4 cup aji amarillo sauce (or substitute with sriracha) warmly
- β1 tsp ground cumin, 1 tsp smoked paprika spiced
- β2 cloves garlic, minced, 1 tsp dried oregano peruvian
- β1/4 cup freshly squeezed lime juice peruvian
- β2 tbsp olive oil brasa
- β1 tsp salt
- β1 tsp pepper
- β1/4 cup water

1. In a blender or food processor, combine aji amarillo sauce, garlic, cumin, smoked paprika, oregano, and lime juice. Blend until smooth.

2. Place the chicken pieces in a large ziplock bag or a shallow dish. Pour the marinade over the chicken and massage to coat. Seal the bag or cover the dish with plastic wrap.

3. Refrigerate for at least 2 hours or overnight.

4. Preheat grill to medium-high heat. Remove the chicken from the marinade, letting any excess liquid drip off.

5. Brush the grill with olive oil to prevent sticking. Grill the chicken for 5-7 minutes per side, or until cooked through.

6. Transfer the chicken to a cutting board and let rest for 5 minutes before serving.
