Spiced Jamaican Mung Bean Curry
A hearty, flavorful curry made with mung beans, spiced with Jamaican seasonings and warmed with a hint of curry.
Ingredients
- β1 cup Mung beans
- β2 tablespoons Warmly spiced oiluse a mix of cumin, coriander, and cayenne pepper
- β2 teaspoons Jamaican curry powder
- β1 medium Onionchopped
- β2 cloves Garlicminced
- β1 teaspoon Curryground
- β1 cup Mung bean sproutschopped

Heat the warmly spiced oil in a large saucepan over medium heat.

Add the onion and cook until softened, about 3-4 minutes.

Add the garlic and cook for an additional minute.

Add the Jamaican curry powder and cook for 1-2 minutes, until fragrant.

Add the mung beans and cook for 1-2 minutes, until coated in the spice mixture.

Add 2 cups of water to the saucepan and bring to a boil.

Reduce the heat to low and simmer, covered, for 20-25 minutes, or until the mung beans are tender.

Stir in the curry and cook for an additional 2-3 minutes.

Add the mung bean sprouts and cook until heated through.
