Algerian Mutton Tagine
A hearty, slow-cooked stew originating from Algeria, typically made with mutton or beef, and a blend of spices.
Ingredients
- β1 pound muttoncut into 1 1/2-inch pieces
- β2 tablespoons warmly spiced olive oilsee note

- β2 teaspoons algerian spices blendsee note

- β1/2 teaspoon black pepperoptional
- β1 tablespoon honeyoptional

Heat the warmly spiced olive oil in a large Dutch oven over medium heat.

Add the chopped onion and cook, stirring occasionally, until softened and lightly browned, about 8 minutes.

Add the minced garlic and cook, stirring constantly, for 1 minute.

Add the mutton pieces and cook, stirring occasionally, until browned on all sides, about 5-7 minutes.

Add the Algerian spices blend, salt, cumin, and black pepper. Stir to combine.

Add 2 cups of water to the pot and bring to a boil.

Reduce the heat to low and simmer, covered, until the mutton is tender, about 2-3 hours.

Stir in the honey, if using.
