Mediterranean Lamb Kebabs
A flavorful and colorful dish featuring lamb kebabs seasoned with mediterranean spices and served with a side of roasted vegetables.
Ingredients
- β500g Lamb Shouldercut into 1-inch cubes
- β1/4 cup Olive Oilfor brushing kebabs
- β2 tbsp Mediterranean Spice Mixavailable at most supermarkets
- β3 cloves Garlicminced
- β1 tsp Fresh Oreganochopped
- β2 Red Bell Peppercut into 1-inch pieces
- β2 Zucchinicut into 1-inch slices
- β1 Red Onioncut into 1-inch pieces

Preheat grill to medium-high heat.

In a large bowl, whisk together olive oil, mediterranean spice mix, garlic, and oregano.

Add lamb cubes to the bowl and toss to coat with the marinade.

Thread lamb cubes, red bell pepper, zucchini, and red onion onto skewers.

Brush both sides of kebabs with olive oil and season with salt and pepper.

Grill kebabs for 8-10 minutes, turning occasionally, or until lamb is cooked to your desired level of doneness.

Transfer kebabs to a serving platter and serve with roasted vegetables.

To make roasted vegetables, toss red bell pepper, zucchini, and red onion with olive oil, salt, and pepper on a baking sheet.
