Runner Bean Spanakopita
A Greek-inspired spanakopita with tender runner beans and feta cheese, perfect as a side dish or light lunch.
Ingredients
- ●250g runner beanstrimmed and chopped
- ●1 package wholesome filo pastry sheetsthawed
- ●150g greek feta cheesecrumbly
- ●2 tbsp greek olive oil
- ●1 medium onionchopped
- ●2 cloves garlicminced
- ●2 tbsp fresh dillchopped
- ●to taste salt

Preheat oven to 180°C (350°F).

In a pan, heat the olive oil and sauté the chopped onion until softened.

Add the minced garlic and cook for 1 minute.

Add the chopped runner beans and cook until tender.

In a bowl, crumble the feta cheese and mix with chopped dill, salt, and black pepper.

Layer the filo pastry sheets, brushing each sheet with olive oil.

Spoon the bean mixture onto one half of the pastry, then top with crumbled feta.

Fold the other half of the pastry over the filling and press the edges to seal.
