Warm Wilted Fish Stew
A comforting, gluten-free fish stew made with fresh vegetables and herbs.
Ingredients
- β4 Cod FilletsSkin removed, cut into 1-inch pieces
- β2 tablespoons Olive Oil
- β1 medium OnionChopped
- β3 cloves GarlicMinced
- β4 cups Mediterranean Leafy GreensWilted
- β1 pint Cherry TomatoesHalved
- β SaltTo taste
- β Black PepperTo taste
- β1/4 cup Fresh ParsleyChopped, for garnish

Heat olive oil in a large saucepan over medium-high heat.

Add the chopped onion and cook for 3-4 minutes, or until softened.

Add the minced garlic and cook for an additional minute.

Add the cod fillets and cook for 2-3 minutes per side, or until cooked through.

Add the wilted Mediterranean leafy greens, cherry tomatoes, salt, and black pepper.

Simmer for 5-7 minutes, or until the stew has thickened slightly.
