Thai Lamb Wrap
A flavorful and spicy Thai-inspired wrap filled with lamb and fresh vegetables.
Ingredients
- β1 pound Lamb legsliced into thin strips
- β2 tablespoons Red Thai curry pastehomemade or store-bought
- β1 cup Coconut milkfull-fat canned coconut milk
- β1/4 cup Fresh cilantrochopped
- β2 tablespoons Lime juicefreshly squeezed
- β1 Warm naan wrapor substitute with a warm flour tortilla
- β1/2 cup Sliced cucumberthinly sliced
- β1/2 cup Sliced carrotsthinly sliced
- β1/4 cup Chopped fresh mintoptional
- β1/4 cup Sliced red onionthinly sliced

1. In a medium skillet, heat 1 tablespoon of oil over medium-high heat.

2. Add the sliced lamb and cook for 2-3 minutes, or until browned.

3. Add the red Thai curry paste and cook for 1 minute, stirring constantly.

4. Stir in the coconut milk and bring to a simmer.

5. Reduce the heat to low and let simmer for 5 minutes, or until the lamb is cooked through.

6. Warm the naan wrap by wrapping it in a damp paper towel and microwaving for 20-30 seconds.

7. Assemble the wrap by spreading the lamb mixture onto the naan, followed by the chopped cilantro, lime juice, and sliced vegetables.
