Welsh Shepherd's Pie
A traditional Welsh twist on the classic shepherd's pie, featuring ground lamb and a rich date gravy.
Ingredients
- β1 lb Ground Lamb80/20 lean to fat ratio
- β1 cup Welsh Dateschopped and pitted
- β1 medium Onionchopped
- β3 cloves Garlicminced
- β2 tbsp All-purpose Flourused as a thickener
- β1 cup Beef Brothlow-sodium
- β1 cup Breadcrumbsgluten-free
- β1/2 cup Grated Cheddaroptional
- β2 tbsp Butterunsalted
- β1/4 cup Potted Welsh Cheesecrumbly

1. Preheat oven to 375Β°F (190Β°C).

2. In a large pan, cook the ground lamb over medium-high heat, breaking it up with a spoon as it cooks, until it is no longer pink, about 5-7 minutes.

3. Add the chopped onion and minced garlic to the pan and cook until the onion is translucent, about 3-4 minutes.

4. Stir in the flour and cook for 1-2 minutes.

5. Gradually add the beef broth, whisking continuously, and bring the mixture to a boil.

6. Reduce the heat to low and simmer the gravy for 10-15 minutes, stirring occasionally.

7. Stir in the chopped dates and cooked lamb mixture. Season with salt and pepper to taste.

8. Transfer the mixture to a 9x13 inch baking dish.

9. In a separate pan, melt the butter over medium heat. Add the breadcrumbs and cook, stirring constantly, until they are lightly toasted, about 2-3 minutes.

10. Top the lamb mixture with the toasted breadcrumbs and crumbled cheese (if using).

11. Bake the shepherd's pie in the preheated oven for 20-25 minutes, or until the top is golden brown and the filling is hot and bubbly.
