Portuguese Chicken Bake
A traditional Portuguese-inspired dish featuring tender chicken and a rich, velvety sauce, all baked to perfection.
Ingredients
- β4 chicken breasts
- β2 tbsp olive oil
- β3 cloves garlic, minced
- β1 onion, chopped
- β1/4 cup port wine
- β2 tbsp tomato paste
- β1 cup tomato sauce
- β salt
- β black pepper
- β2 sprigs rosemary, chopped

Preheat the oven to 375Β°F (190Β°C).

Season the chicken breasts with salt and pepper.

In a large skillet, heat the olive oil over medium heat.

Add the garlic and cook for 1 minute, until fragrant.

Add the onion and cook until softened, about 3-4 minutes.

Add the port wine and cook until reduced by half, about 2-3 minutes.

Stir in the tomato paste and cook for 1 minute.

Add the tomato sauce and bring to a simmer.

Place the chicken breasts in the skillet and spoon some of the sauce over the top.

Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through.
