Spicy Vietnamese Noodle Soup
A flavorful and spicy noodle soup inspired by Vietnamese cuisine, made with tofu and a variety of vegetables.
Ingredients
- β1 block Tofuextra-firm, drained and cut into small cubes
- β8 oz Rice noodlesdried or fresh
- β4 cups Vegetable brothhomemade or store-bought
- β2 inches Gingergrated
- β3 cloves Garlicminced
- β2 tbsp Spicy chili saucesuch as sriracha
- β1 tbsp Fish sauceoptional
- β2 tbsp Lime juicefreshly squeezed
- β1/4 cup Chopped cilantrooptional
Instructions

Bring the vegetable broth to a boil in a large pot.

Add the grated ginger and minced garlic to the pot and simmer for 2 minutes.

Add the tofu cubes to the pot and cook for 3-4 minutes, or until lightly browned.

Add the rice noodles to the pot and cook for 2-3 minutes, or until slightly softened.

Stir in the spicy chili sauce, fish sauce (if using), and lime juice.

Season the soup with salt and pepper to taste.

Garnish with chopped cilantro (if using) and serve hot.

Serve the noodles in bowls and ladle the soup over the top.
