Japanese Chicken Noodle Stir Fry
A simple and flavorful Japanese-inspired stir fry made with chicken, noodles, and warm, spicy Thai-inspired flavors.
Ingredients
- β1 pound boneless, skinless chicken breastscut into bite-sized pieces
- β8 ounces Japanese noodlessuch as soba or udon
- β2 tablespoons Thai red curry pasteor to taste
- β2 tablespoons soy sauceor to taste
- β1 tablespoon honeyor to taste
- β1 tablespoon grated gingeror to taste
- β1 tablespoon vegetable oilfor cooking
- β1/4 cup green onionschopped, for garnish

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the chicken to the skillet and cook until browned and cooked through, about 5-7 minutes.

Remove the chicken from the skillet and set aside.

Add the Thai red curry paste to the skillet and cook for 1 minute, stirring constantly.
