Mexican Chicken Paella
A spicy twist on traditional Spanish paella, this Mexican-inspired dish is perfect for a weeknight dinner. Chicken, sausage, and vegetables come together in a flavorful and filling meal.
Ingredients
- β1 pound, cut into 1-inch pieces chicken breast
- β1/2 pound, sliced Spanish chorizolook for Mexican or Spanish chorizo for authentic flavor
- β1 cup paella rice
- β1 medium onion diced onion
- β1 medium bell pepper diced red bell pepper
- β1 medium tomato diced tomato
- β3 cloves garlic
- β2 cups chicken broth
- β1 cup water
- β1 teaspoon paprikasmoked or sweet paprika works well

Heat oil in a large paella pan or skillet over medium-high heat.

Add the chorizo and cook, stirring occasionally, until browned, about 5 minutes.

Add the chicken and cook until browned, about 5 minutes.

Add the onion, bell pepper, and tomato. Cook, stirring occasionally, until the vegetables are tender, about 10 minutes.

Add the garlic, paprika, and rice. Cook, stirring constantly, for 1 minute.

Add the chicken broth and water. Bring to a boil, then reduce the heat to low and simmer, covered, for 20 minutes.
