Warm Polish Beet Pasta
A hearty and comforting pasta dish infused with beet and warm polish flavors.
Ingredients
- ●8 oz pastapenne or fusilli work well
- ●2 medium beetspeeled and diced
- ●2 tbsp olive oilfor roasting beets
- ●3 cloves garlicminced
- ●1/2 cup polish sausageoptional, for added protein
- ●1 tsp warm spice blendsuch as paprika and caraway seeds
- ●to taste salt
- ●to taste black pepper
Instructions

Preheat oven to 425°F (220°C).

Toss beets with olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes, or until tender.

Cook pasta according to package instructions until al dente.

In a large skillet, sauté garlic and polish sausage (if using) over medium heat until the sausage is browned.

Add roasted beets to the skillet and stir to combine.

Add warm spice blend and stir to combine.

Combine cooked pasta and beet mixture in the skillet. Toss to combine.

Season with salt and pepper to taste.

Serve hot, garnished with chopped fresh parsley or dill (optional).
