Kenyan Spiced Apple Tagine
A traditional Kenyan-inspired stew made with tender apples, aromatic spices, and a hint of warmth.
Ingredients
- β2 large ApplesGranny Smith or Honeycrisp
- β1 medium OnionChopped
- β3 cloves GarlicMinced
- β2 inches GingerFresh, grated
- β1 teaspoon CuminGround
- β1 teaspoon CorianderGround
- β1/2 teaspoon Cayenne pepperAdjust to taste
- β1/2 teaspoon CinnamonGround
- β2 tablespoons Coconut oilFor browning
- β2 cups Chicken brothLow-sodium
- β2 tablespoons HoneyOptional
Instructions

Heat the coconut oil in a large Dutch oven over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and ginger and cook for 1 minute, until fragrant.

Add the cumin, coriander, cayenne pepper, and cinnamon. Cook for 1 minute.

Add the apples and cook for 2-3 minutes, until slightly tender.

Add the chicken broth and bring to a simmer.

Reduce heat to low and cook, covered, for 20-25 minutes, or until the apples are tender.

Stir in the honey, if using.
