Szechuan Chicken Noodles
Spicy Szechuan chicken noodles, a classic Chinese dish with a bold and aromatic flavor.
Ingredients
- β1 lb chicken breastboneless and skinless
- β8 oz noodles (rice noodles or egg noodles)preferably fresh
- β2 tbsp Szechuan peppercornstoasted
- β2 tbsp chili bean paste
- β2 tbsp soy sauce
- β2 tbsp rice vinegar
- β2 tbsp vegetable oil
- β3 cloves garlicminced
- β1 bunch green onionschopped

Cook noodles according to package instructions. Drain and set aside.

In a blender or food processor, grind Szechuan peppercorns into a fine powder.

Heat vegetable oil in a wok or large skillet over medium-high heat. Add garlic and cook until fragrant.

Add chicken to the wok and cook until browned, about 5-6 minutes. Remove from wok and set aside.

In the same wok, add chili bean paste and cook for 1 minute, stirring constantly.

Add soy sauce, rice vinegar, and Szechuan peppercorn powder to the wok. Stir to combine.

Return chicken to the wok and stir to coat with sauce.

Add cooked noodles to the wok and stir-fry until combined with the chicken and sauce.
