Smoked Anticuchos
A French twist on traditional Peruvian grilled beef heart skewers, smothered in a warm, smoky sauce.
Ingredients
- β500g beef heartcut into 1-inch cubes
- β1/4 cup red wine vinegarfor marinade
- β2 tbsp olive oilfor grilling
- β3 cloves garlicminced
- β1 tsp smoked paprikasmoky flavor
- β1 tsp saltto taste
- β1 tsp black pepperto taste

1. Preheat grill to medium-high heat.

2. In a large bowl, whisk together red wine vinegar, olive oil, garlic, smoked paprika, salt, and black pepper.

3. Add beef heart cubes to the marinade and mix well.

4. Thread marinated beef heart onto skewers, leaving a small space between each piece.

5. Grill skewers for 3-4 minutes per side, or until cooked to your desired level of doneness.

6. Meanwhile, prepare warm sauce by combining 1/4 cup warm water, 1 tsp smoked paprika, and 1 tsp olive oil in a small bowl.

7. Brush warm sauce onto grilled anticuchos during the last minute of cooking.
