Jamaican Hash and Peas
A flavorful and easy-to-make dish that combines the warmth of Jamaican spices with the comfort of roasted vegetables.
Ingredients

- ●1 tsp jamaican seasoningstore-bought or homemade
- ●1 cup warm peasfresh or frozen
- ●1 medium, diced roasted sweet potatoesroasted at 400°F (200°C) for 45 minutes
- ●1 tsp cuminoptional
- ●1/2 tsp black pepperoptional
- ●to taste saltoptional
- ●1 tsp olive oilfor roasting sweet potatoes

Preheat oven to 400°F (200°C).

Toss the diced sweet potatoes with olive oil, salt, black pepper, and cumin. Roast for 45 minutes.

While the sweet potatoes are roasting, heat a pan over medium heat. Add the diced hash browns and cook until crispy.

Add the Jamaican seasoning to the pan and stir to combine.

Add the warm peas to the pan and stir to combine.

To assemble the dish, scoop the roasted sweet potatoes onto a plate followed by the hash and peas mixture.
