Fir and Ackee Ethiopian Breakfast
A traditional Ethiopian breakfast dish featuring roasted fir and ackee. This recipe combines the flavors of the fir tree with the creamy texture of ackee.
Ingredients

- β1 cup AckeeCanned or fresh, drained and chopped
- β1 medium OnionChopped
- β2 cloves GarlicMinced
- β1 tsp Ground ginger
- β1 tsp Cumin
- β1 tsp Turmeric
- βto taste Salt
- βto taste Black pepper
- β2 pieces Warm injera breadTraditional Ethiopian flatbread

Heat 2 tablespoons of oil in a pan over medium heat.

Add the chopped onion and cook until softened, about 3-4 minutes.

Add the minced garlic and cook for another minute.

Add the fir needles, ground ginger, cumin, turmeric, salt, and black pepper. Cook for 2-3 minutes.

Add the chopped ackee and stir well. Cook for 2-3 minutes.

Warm the injera bread by wrapping it in a damp cloth and microwaving for 20-30 seconds.

Assemble the breakfast dish by placing the fir and ackee mixture on top of the warmed injera bread.
