Squash Tagine
A hearty and flavorful North African-inspired stew from India, made with roasted butternut squash and spices.

Ingredients
- β1 medium, peeled and cubed Roasted butternut squash
- β2 tsp Algerian butternut tagine spice blend
- β2 tbsp Olive oil
- β1 medium, chopped Onion
- β3 cloves, minced Garlic
- β1 can, diced Tomato
- β1 can Coconut milk
- βto taste Salt
- βto taste Black pepper

Instructions

Heat oil in a large pan over medium heat.

Add onion and cook until softened, 5 minutes.

Add garlic and cook for 1 minute.

Add cubed squash and cook for 5 minutes.

Add tomato, spice blend, coconut milk, salt, and pepper. Stir to combine.
