Spicy Thai Cheese Tagine
A fusion of warm, Middle Eastern, and Eastern flavors in a Thai twist. This creamy cheese tagine is perfect for a cozy evening.
Ingredients

- β100g Curds
- β1 Tagine
- β2 tbsp Thai Red Curry Paste
- β250ml Coconut Milk
- β1 tsp Fish Sauce
- β1 tsp Brown Sugar
- βhandful Fresh Cilantro
Instructions

In a large clay tagine or Dutch oven, heat 2 tbsp of coconut oil over medium heat.

Add the Thai red curry paste and cook for 1-2 minutes, until fragrant.

Add the cheese and curds, and stir until they start to melt.

Pour in the coconut milk, fish sauce, and brown sugar. Stir to combine.

Bring the mixture to a simmer, then reduce heat to low and let cook for 10-15 minutes, stirring occasionally.

Stir in some chopped cilantro and season with salt to taste.

Serve warm, garnished with additional cilantro if desired.
