Malaysian Tofu Curry
A spicy and flavorful curry made with tofu and warm spices, inspired by the cuisine of Malaysia.
Ingredients
- β1 block (14 oz) tofu
- β2 tbsp coconut oil
- β1 medium onion
- β3 cloves garlic
- β2 tsp curry powder
- β1 tsp warm spicesground cumin, coriander, and cinnamon
- β1 can (14 oz) coconut milk
- β2 cups chicken broth
- β2 tbsp lime juice
- β1 tsp brown sugar

Heat oil in a large pan over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and cook for 1 minute.

Add the curry powder and warm spices and cook for 1 minute, stirring constantly.

Add the tofu and cook until lightly browned, about 3-4 minutes.

Pour in the coconut milk and chicken broth, and bring to a simmer.

Reduce heat to low and let cook for 10-15 minutes or until the sauce has thickened.

Stir in the lime juice and brown sugar.
