Venezuelan Chicken and Rice Pilaf
A flavorful and aromatic dish from Venezuela, combining chicken, rice, and spices.
Ingredients
- β1 lb boneless, skinless chicken breastcut into 1-inch pieces
- β1 cup uncooked white ricerinse before using
- β1 tsp pilaf seasoningstore-bought or homemade
- β2 tbsp olive oilfor cooking
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 tbsp tomato pastecanned
- β2 cups chicken brothlow-sodium

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Add the chicken to the skillet and cook until browned, about 5-6 minutes.

Remove the chicken from the skillet and set aside.

Add the remaining 1 tablespoon of olive oil to the skillet.

Add the chopped onion and minced garlic to the skillet and cook until the onion is translucent.

Stir in the pilaf seasoning, tomato paste, and chicken broth.
