Beef Feijoada
Hearty Portuguese stew made with beef, beans, and vegetables. Feijoada is a popular dish originating from Brazil, but with a Portuguese twist.
Ingredients
- ●1 pound (450g) beef brisket or beef shank beefcut into 1-inch (2.5cm) cubes
- ●1 medium onionchopped
- ●3 cloves garlicminced
- ●2 tablespoons tomato pastecanned or fresh
- ●2 cups (475ml) beef brothbeef broth or stock
- ●1 bunch kalechopped

In a large pot or Dutch oven, heat 2 tablespoons of oil over medium heat.

Sear the beef cubes until browned on all sides, then set aside.

Sauté the onion and garlic until softened, about 3-4 minutes.

Add the tomato paste and cook for 1 minute, stirring constantly.

Add the beef broth, browned beef, and chopped kale to the pot.

Bring to a boil, then reduce heat to low and simmer for 1-2 hours, or until the beef is tender.

Season with salt and pepper to taste.

Serve hot with rice, farofa, or crusty bread.
