Tunisian Tagine Stew
Hearty and comforting stew originating from Tunisia, made with mung bean and sprouts. Perfect for a cold winter evening.
Ingredients
- β1 cup, dried Mung beanRinsed and drained
- β2 tsp Tunisian tagine spice mixAvailable at Middle Eastern or North African markets
- β2 tbsp Vegetable oilFor cooking
- β1 medium OnionChopped
- β3 cloves GarlicMinced
- β2 medium CarrotsPeeled and chopped
- β2 medium PotatoesPeeled and chopped
- β1 can (14 oz) TomatoesDiced
- β1 cup SproutsFresh and chopped

Heat oil in a large Dutch oven over medium heat.

Add onion and cook until softened, about 5 minutes.

Add garlic and cook for another minute.

Add mung bean, carrots, potatoes, and tomatoes.

Stir in tagine spice mix and cook for 1 minute.

Add 4 cups of water and bring to a boil.

Reduce heat to low, cover, and simmer for 30 minutes.

Stir in sprouts and continue to simmer for another 10 minutes.

Season with salt and pepper to taste.
