Delicate Vietnamese Pho
A traditional Vietnamese noodle soup with a delicate broth and tender pork.
Ingredients
- β2 pounds Pork bonesBeef or pork bones can be used
- β2 inches GingerSliced
- β1 OnionSliced
- β2 Star aniseWhole
- β1 Cinnamon stickWhole
- β2 tablespoons Fish sauceOptional
- β2 tablespoons Soy sauceOptional
- β1 pound Rice noodlesFresh or dried
- β1 pound Pork shoulderThinly sliced
- β1 cup Bean sproutsOptional
- β1 cup Fresh herbsOptional, such as basil, mint, or cilantro

1. Preheat oven to 400Β°F (200Β°C).

2. Place pork bones on a baking sheet and roast for 30 minutes.

3. In a large pot, combine ginger, onion, star anise, and cinnamon stick.

4. Add roasted pork bones, fish sauce, and soy sauce to the pot.

5. Pour in 4 cups of water and bring to a boil.

6. Reduce heat to low and simmer for 1 hour.

7. Strain the broth through a fine-mesh sieve into a clean pot.

8. Cook rice noodles according to package instructions.

9. Slice pork shoulder into thin strips.

10. Assemble pho by placing noodles in a bowl, adding sliced pork, and ladling hot broth over the top.
