Kenyan Crunchy Wrap
A crunchy and flavorful Kenyan-inspired wrap filled with spiced almonds and warm vegetables.
Ingredients
- β1 large flour wrapgluten-free wrap
- β1/2 cup almondschopped and toasted
- β2 medium carrotspeeled and grated
- β1 cucumbersliced
- β1 cup cherry tomatoeshalved
- β1/2 medium red onionthinly sliced
- β2 green chiliesthinly sliced
- β2 tbsp crunchy peanut butteror crunchy tahini
- β1 tsp coconut oilfor brushing wrap
- βto taste salt
Instructions

Preheat a non-stick pan or griddle over medium heat.

Brush the wrap with coconut oil and place it in the pan for 1-2 minutes on each side, until it's warm and slightly puffed.

In a bowl, mix together the almonds, carrots, cucumber, cherry tomatoes, red onion, and green chilies.

Spread the crunchy peanut butter on the warmed wrap, leaving a 1-inch border around the edges.

Add the vegetable and almond mixture on top of the peanut butter, spreading it evenly.

Fold the bottom edge of the wrap up over the filling, then fold in the sides and roll the wrap into a tight cylinder.

Cut the wrap in half and serve immediately.
