Crispy Vietnamese Banh Mi Sandwich
A delicious and easy-to-make Vietnamese-inspired sandwich featuring crispy banh mi bread, juicy chicken, and fresh herbs. Perfect for a quick lunch or dinner.
Ingredients
- ●4-6 inches of bread, sliced in half Banh Mi Bread
- ●1 pound boneless, skinless chicken breasts, cut into thin slices Crispy Fried Chicken
- ●1/2 cup of pickled carrots and daikon, sliced Pickled Carrots and Daikon
- ●1/4 cup of mayonnaise Mayo
- ●1/4 cup of chopped cilantro Chopped Cilantro
- ●1-2 sliced jalapeños Sliced Jalapeños
- ●1/2 cup of sliced cucumber Sliced Cucumber
- ●1/2 cup of sliced radishes Sliced Radishes
- ●4-6 hoagie rolls Hoagie Rolls

Preheat a large skillet or wok over medium-high heat.

Add 1-2 inches of oil to the skillet and heat until it reaches 350°F.

Dredge the chicken slices in a mixture of cornstarch, salt, and pepper, then carefully place them in the hot oil.

Fry the chicken for 5-7 minutes on each side, or until it reaches an internal temperature of 165°F.

Remove the chicken from the oil and place it on a paper towel-lined plate to drain excess oil.

In a small bowl, mix together the mayonnaise, chopped cilantro, sliced jalapeños, and a pinch of salt and pepper.

Spread a layer of the mayonnaise mixture on the bottom half of each banh mi bread.

Add a few slices of the fried chicken on top of the mayonnaise mixture.

Add a few slices of the pickled carrots and daikon, sliced cucumber, and sliced radishes on top of the chicken.

Place the top half of the banh mi bread on each sandwich and serve immediately.

Repeat the process for each sandwich, using the leftover chicken and pickled vegetables.
