Classic Mujadara
A traditional Middle Eastern dish made with lentils and caramelized onions, perfect for a comforting meal.
Ingredients
- β1 cup green lentils
- β2 medium onionpeeled and thinly sliced
- β1/4 cup crispy sumac onionsoptional
- β2 tablespoons warm olive oil
- βto taste salt
- βto taste black pepper
- β1 teaspoon eastern spicesa blend of cumin, coriander, and paprika

Rinse the lentils and pick out any debris.

In a medium saucepan, heat 1 tablespoon of olive oil over medium heat.

Add the sliced onions and cook, stirring occasionally, until they're dark golden brown and caramelized, about 30 minutes.

Add the lentils, olive oil, salt, black pepper, and eastern spices to the saucepan.

Stir to combine, then add 4 cups of water and bring to a boil.

Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the lentils are tender.

Fluff the lentils with a fork and serve hot, topped with crispy sumac onions if desired.
