Japanese Lentil Casserole
A unique fusion of Japanese flavors with traditional lentil casserole ingredients. Serve as a side dish or light meal.
Ingredients
- ●1 cup, rinsed and drained Lentils
- ●1 loaf, cubed Warm, buttery Egyptian bread
- ●4 tablespoons Butter
- ●2 cups Lentil broth
- ●2 tablespoons Soy sauce
- ●1 tablespoon Sesame oil
- ●2 teaspoons, grated Ginger
- ●1/4 cup, chopped Green onions

Preheat oven to 375°F (190°C).

In a large pot, sauté the ginger and green onions in sesame oil until fragrant.

Add the lentils, broth, and soy sauce. Bring to a boil, then reduce heat to low and simmer for 20 minutes.

In a separate pan, melt 2 tablespoons of butter and toast the bread cubes until crispy.

In a large casserole dish, combine the cooked lentil mixture and toasted bread. Stir in the remaining 2 tablespoons of butter until melted.

Season with salt and pepper to taste.

Bake for 15-20 minutes, or until the top is golden brown.
