Middle Eastern Chicken Pilaf
A flavorful and nutritious pilaf dish featuring chicken and long beans, inspired by the cuisine of the Middle East.
Ingredients
- β1 pound boneless, skinless chicken breastcut into bite-sized pieces
- β1 cup long beanssliced
- β1 cup riceuncooked
- β2 tablespoons olive oilfor cooking
- β1 medium onionchopped
- β2 cloves garlicminced
- β1 teaspoon pilaf spicesa blend of cumin, coriander, and turmeric
- βto taste salt

Heat the olive oil in a large wok or frying pan over medium-high heat.

Add the chicken to the wok and cook until seared, about 5 minutes. Remove the chicken from the wok and set aside.

Add the onion and garlic to the wok and cook until the onion is translucent, about 3 minutes.

Add the long beans to the wok and cook for an additional 2 minutes.

Add the rice to the wok and cook for 1-2 minutes, stirring constantly.

Add the pilaf spices and salt to the wok and stir to combine.

Add the chicken back to the wok and stir to combine with the rice and vegetables.

Reduce heat to low, cover the wok, and simmer for 18-20 minutes, or until the rice is cooked and the liquid has been absorbed.
