Mung Bean Sambhar
A traditional South Indian dish made with mung beans and spices. This recipe is a flavorful and nutritious option for a comforting meal.
Ingredients
- ●1 cup mung beanssorted and rinsed
- ●2 cups sambharhomemade or store-bought
- ●2 tablespoons vinegarywhite vinegar
- ●1 small onion chewychopped
- ●2 teaspoons indianground cumin and coriander
- ●1 cup beanscooked and mashed

Rinse the mung beans and soak them in water for at least 4 hours. Drain and set aside.

Heat oil in a pan and sauté the chopped onion until translucent.

Add the ground cumin and coriander and cook for 1 minute.

Add the sambhar and vinegary to the pan and bring to a boil.

Add the mung beans to the pan and reduce heat to low.

Simmer the mixture for 20-25 minutes or until the mung beans are tender.

Add the cooked and mashed beans to the pan and stir well.

Season the sambhar with salt to taste.
