Vegan Stew
A hearty and flavorful vegan stew made with a variety of vegetables and a hint of Norwegian flair.
Ingredients

- β1 1/2 pounds Potatoes
- β1 large Onions
- β1 cup Mushrooms
- β2 cups Tomatoes
- β4 cups Vegetable broth
- β2 tablespoons Lemon juice
- β3 cloves Garlic

Heat a large stew pot over medium heat.

Add the onions and cook until they are softened, about 5 minutes.

Add the mushrooms and cook until they release their liquid and start to brown, about 5 minutes.

Add the carrots, potatoes, and tomatoes. Cook for 10 minutes, stirring occasionally.

Add the vegetable broth and lemon juice. Stir to combine.
