Grilled Lamb Skewers with Thai Peanut Sauce

Ingredients
- β500g Lamb Shouldercut into 1-inch cubes
- β4-5 Vibrant Vegetable Skewers
- β1 cup Smoky Peanut Sauce
- β2 tbsp Canadian Maple Syrup
- β2 tbsp Fish Sauce
- β2 tbsp Soy Sauce
- β2 tbsp Lime Juice
- β1 tbsp Honey
- βhandful Cilantro

Preheat grill to medium-high heat.

In a large bowl, whisk together fish sauce, soy sauce, lime juice, and honey. Add the lamb cubes and marinate for at least 30 minutes.

Thread lamb onto skewers, leaving a small space between each piece.

Grill skewers for 8-10 minutes per side, or until lamb reaches an internal temperature of 145Β°F (63Β°C).

Meanwhile, prepare the Thai peanut sauce by whisking together peanut butter, soy sauce, maple syrup, and fish sauce in a small bowl.

Brush the peanut sauce onto the lamb skewers during the last 2 minutes of grilling.
