Indian-Style Cauliflower Curry
A flavorful and nutritious curry made with cauliflower, polish sausage, and vibrant spices. Serve with rice or naan for a complete meal.
Ingredients
- β1 head cauliflowerbroken into florets
- β1/2 pound, sliced polish sausageuse vegetarian sausage for a vegetarian version
- β1 medium, chopped onionoptional
- β2 teaspoons curry powderadjust to taste
- β1 teaspoon garam masalaadjust to taste
- β1 can (14 oz) coconut milkfull-fat or low-fat, depending on preference
- βto taste saltoptional
- βto taste black pepperoptional
Instructions

Heat 2 tablespoons of oil in a large skillet over medium-high heat.

Add the sliced polish sausage and cook until browned, about 3-4 minutes.

Remove the sausage from the skillet and set aside.

Add the chopped onion to the skillet and cook until softened, about 3-4 minutes.

Add the curry powder and garam masala to the skillet and cook for 1 minute, stirring constantly.
