Vindaloo Chicken
A popular Indian-inspired dish with marinated chicken cooked in a spicy tomato-based curry sauce.
Ingredients
- β1 1/2 pounds Chicken breastcut into 1-inch pieces
- β2 tablespoons Vindaloo curry pastestore-bought or homemade
- β1 cup Tomato saucehomemade or store-bought
- β2 tablespoons Mustard oilor vegetable oil
- β1 teaspoon Saltor to taste
- β1/2 teaspoon Black pepperor to taste
- βchopped (optional) Cilantrofor garnish
- β1, sliced Vibrant red bell pepperoptional
Instructions

Heat oil in a large skillet over medium-high heat.

Add chicken and cook until browned, about 5-6 minutes.

Remove chicken from skillet and set aside.

Add curry paste to skillet and cook for 1 minute, stirring constantly.

Add tomato sauce, salt, and pepper to skillet. Stir to combine.

Return chicken to skillet and stir to coat with sauce.

Reduce heat to medium-low and simmer for 10-12 minutes, or until chicken is cooked through.

Stir in chopped cilantro (if using).

Serve hot, garnished with sliced red bell pepper (if using).
