Ethiopian Vegetable Stew
A flavorful and spicy vegetable stew inspired by Ethiopian cuisine. This recipe is perfect for a weeknight dinner or special occasion.
Ingredients

- β1 medium, chopped Onionabout 2 cups
- β3 cloves, minced Garlicabout 1 tablespoon
- β2 teaspoons Berbere spicesee note
- β1 medium, chopped Vibrant red bell pepperabout 1 cup
- β1 can (14 oz) Light coconut milkfull-fat coconut milk
- β1 cup, chopped Stewany combination of carrots, potatoes, zucchini, etc.

Instructions

Heat the oil in a large saucepan over medium-high heat.

Add the onion and cook until softened, about 3-4 minutes.

Add the garlic and cook for 1 minute, until fragrant.

Add the berbere spice and cook for 1 minute, until fragrant.

Add the bell pepper and cook until tender, about 5 minutes.

Add the stew and cook until the vegetables are tender, about 10-15 minutes.
