Vegan Muchim Stuffed Peppers
A flavorful and nutritious vegan meal, made by filling bell peppers with a spicy muchim mixture.

Ingredients
- β4 Bell Peppersany color
- β1 cup Muchim mixturesee below
- β2 tablespoons Vegan Gochujang
- β1 tablespoon Vegan soy sauce
- β1 tablespoon Gingergrated
- β2 cloves Garlicminced
- β1 teaspoon Korean chili flakes
- β1 tablespoon Rice vinegar
- β1/4 cup Chopped green onions

Preheat oven to 375Β°F (190Β°C).

Cut the tops off the bell peppers and remove seeds and membranes.

In a pan, combine the muchim mixture ingredients and cook over medium heat for 5 minutes.

Stuff each bell pepper with the cooked muchim mixture.

Place the stuffed peppers in a baking dish and cover with foil.

Bake for 25 minutes, then remove foil and continue baking for another 15 minutes.
