Lamb Stew with Italian Flair
A hearty Italian-inspired stew made with tender lamb and a blend of flavorful herbs.
Ingredients
- ●1.5 pounds lamb shouldercut into 1-inch cubes
- ●1 cup portuguese red wineor substitute with Italian red wine
- ●2 tablespoons olive oilfor browning lamb
- ●1 medium onionchopped
- ●3 cloves garlicminced
- ●2 cups vibrant tomatoescanned or fresh
- ●2 cups chicken broth
- ●1 tablespoon herbsdried or fresh basil, thyme, and rosemary
- ●1 teaspoon saltto taste
- ●1/2 teaspoon black pepperto taste

Heat the olive oil in a large Dutch oven over medium-high heat.

Brown the lamb cubes until browned on all sides, about 5 minutes.

Remove the lamb from the pot and set aside.

Reduce the heat to medium and sauté the chopped onion until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute, until fragrant.

Add the tomatoes, chicken broth, herbs, salt, and pepper to the pot.

Return the lamb to the pot, cover, and transfer to the oven.

Braise the lamb stew at 300°F (150°C) for 2 1/2 to 3 hours, or until the lamb is tender.
