Miniature French Vegetable Tatin
A miniature version of the classic French dessert, featuring caramelized vegetables in a sweet pastry crust.

Roll out the puff pastry and cut into a square.

In a bowl, mix bell peppers, vegetables, shallots, and brown sugar.

Arrange the mixture on one half of the pastry square, leaving a 1/2-inch border.
