Vibrant Vegan Dutch Bowl
A colorful and nutritious bowl filled with marinated tofu, roasted vegetables, and a tangy sauce. Perfect for a quick and easy lunch or dinner.
Ingredients
- β1 block tofumarinated
- β2 cups dutchmixed greens
- β1 large bowl
- β2 medium carrots
- β1 cup cherry tomatoes
- β1 medium cucumber
- β2 tbsp apple cider vinegar
- β1 tbsp olive oil
- βto taste salt
- βto taste pepper
Instructions

Preheat oven to 400Β°F (200Β°C).

Cut the carrots and cucumber into bite-sized pieces.

Place the tofu on a baking sheet lined with parchment paper.

Drizzle the olive oil over the tofu and season with salt and pepper.

Roast the tofu in the oven for 20-25 minutes, or until golden brown.

While the tofu is roasting, toast the mixed greens in a large bowl.

Cut the cherry tomatoes in half and add to the bowl.

Slice the roasted tofu into thin strips and add to the bowl.
